- 2 cans 15 oz each chickpeas, drained and rinsed
- 1 large onion finely chopped
- 3 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper adjust to taste
- Salt and black pepper to taste
- 1 can 14 oz diced tomatoes, undrained
- 1 cup vegetable broth
- 1/2 cup dried apricots chopped
- 1/4 cup raisins
- 2 tablespoons olive oil
- Fresh cilantro chopped, for garnish
Instructions
- Prepare Chickpeas: In the tagine pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
- Add Spices: Stir in cumin, coriander, cinnamon, paprika, ground ginger, turmeric, cayenne pepper, salt, and black pepper.
- Combine Ingredients: Add chickpeas, diced tomatoes, vegetable broth, chopped apricots, and raisins. Stir well to combine.
- Simmer: Cover the tagine and simmer on low heat for 30-40 minutes, allowing flavors to meld.
- Garnish and Serve: Adjust seasoning if needed. Garnish with fresh cilantro before serving. Serve over couscous or rice.
