Ingredients
  

  • 2 cans 15 oz each chickpeas, drained and rinsed
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper adjust to taste
  • Salt and black pepper to taste
  • 1 can 14 oz diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1/2 cup dried apricots chopped
  • 1/4 cup raisins
  • 2 tablespoons olive oil
  • Fresh cilantro chopped, for garnish

Instructions
 

  • Prepare Chickpeas: In the tagine pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  • Add Spices: Stir in cumin, coriander, cinnamon, paprika, ground ginger, turmeric, cayenne pepper, salt, and black pepper.
  • Combine Ingredients: Add chickpeas, diced tomatoes, vegetable broth, chopped apricots, and raisins. Stir well to combine.
  • Simmer: Cover the tagine and simmer on low heat for 30-40 minutes, allowing flavors to meld.
  • Garnish and Serve: Adjust seasoning if needed. Garnish with fresh cilantro before serving. Serve over couscous or rice.
