- 2 lbs 900g lamb, cubed
- 1 cup whole almonds
- 1 large onion finely chopped
- 4 cloves garlic minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp cayenne pepper adjust to taste
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup chicken or lamb broth
- Fresh cilantro or parsley for garnish
In a bowl, marinate lamb with spices, garlic, and olive oil. Refrigerate overnight for maximum flavor.
Heat olive oil in the tagine or pot. Sauté chopped onions until translucent.
Add marinated lamb, brown on all sides, and add chicken or lamb broth.
Cover and simmer for 1 hour until lamb is tender.
Toast almonds in a dry pan until golden, then add them to the tagine.
Season with salt and pepper, garnish with fresh herbs, and serve over couscous or rice.
